Kohlorabi Slaw

1 medium kohlorabi, peeled and shredded
1 small carrot, shredded
1 T shredded onion
3 T vinegar (apple cider or white)
2 T sweetener (honey or cane juice crystals)
2 T extra virgin olive oil
1/4 t sea salt
2 T fresh dill, chopped (or other fresh herbs)
freshly group pepper to taste

Combine all ingredients and mix together well. Refrigerate 2 hours to meld flavors. Enjoy!
