Garam Masala

ingredients:
1 1/2 T cumin seeds
1 1/2 T coriander seeds
1/4 t fennel seeds
1 - 3 inch cinnamon stick, broken into pieces
1 1/2 T black peppercorns
4 green cardamon pods
1/4 t whole cloves
4 small, dried red chilies, broken
1/2 t sesame seeds
1/4 t freshly grated nutmeg

directions:
Heat a wok over medium heat until very hot. Add all the ingredients except nutmeg. Reduce heat to low and toast for 5-8 minutes, tossing and turning constantly, until aromatic. Add the nutmeg. Remove from heat and allow to cool. Grind to a fine powder in a spice grinder. Store in an airtight jar. (Yields 1/4 cup spice mixture)

Orange Zest Granola


Whisk together:
1 cup water
1/2 cup melted coconut oil or grapeseed oil
3/4 cup maple syrup or honey
zest of 3 oranges
1/2 tsp salt

Mix together in a large bowl:

9 cups rolled oats
1/3 cup ground flaxseed
1 cup unsweetened, flaked or shredded coconut
1/2 cup sunflower seeds
1 1/2 cup walnuts, almonds or pecans

Bake at 225 degrees for 2 1/2 hours. Let cool. Store in air tight container.

(optional) After granola has cooled, Stir in:
1 cup craisins, raisins, other dried fruit or chocolate chips

Spicy Tilapia

Gluten Free, Soy Free, Dairy Free, Egg Free

ingredients:
2 Tilapia fillets
1 t. oilve oil
1 t.  paprika
1/4 - 1/2 t. Cayenne pepper
1/4 t. freshly ground black pepper
2-3 T lime juice

directions:
Preheat oven to 400 degrees. Mix together spices. Drizzle olive oil over fish, then coat with spice mixture. Lay fish in a glass baking dish. Pour lime juice over fish and spices. Bake for 10-15 minutes or till done.
