Red Cabbage, Apple and Onion Slaw


ingredients:
4 cups shredded red cabbage
½ cup shredded or chopped carrot
4 Tbsp. finely chopped onion
2 Tbsp. fresh lemon juice
1 Tbsp. honey or maple syrup
1 Tbsp. olive oil
1 large tart apple, peeled and find finely chopped
salt and pepper

directions:
Toss all ingredients except salt and pepper. Chill 30 minutes, season to taste with salt and pepper, and serve. Makes 6 servings.
