Whipped Cashew Kream

Ingredients
1 cup cashews
1/2 cup coconut oil
1 T alcohol-free vanilla extract
1/2 cup filtered water

Directions
Place all the ingredients in a high-speed blender and blend until smooth. Serve with berries...ect.

Basic Flourless Cake

Ingredients
3 cups nuts (such as: walnuts, almonds, Brazil nuts, or pecans)
1/4 tsp seal salt
1 cup pitted Medijool dates, packed (If you use a dryer date, simple soak them in warm water for 20 min.)
1 T alcohol-free vanilla extract
1 to 2 T maple syrup, honey or rice syrup

Directions
Place nuts and salt in food processor and break down nuts into chunks. Add pieces of dates and vanilla. Process until the nuts bind together with the sticky dates to form batter.

Test the batter by grabbing a handful and squeezing to make sire it holds together. If it is not sticky enough, add a few more dates, or 1 to 2 T (syrup or honey) till it holds together.

Garam Masala

ingredients:
1 1/2 T cumin seeds
1 1/2 T coriander seeds
1/4 t fennel seeds
1 - 3 inch cinnamon stick, broken into pieces
1 1/2 T black peppercorns
4 green cardamon pods
1/4 t whole cloves
4 small, dried red chilies, broken
1/2 t sesame seeds
1/4 t freshly grated nutmeg

directions:
Heat a wok over medium heat until very hot. Add all the ingredients except nutmeg. Reduce heat to low and toast for 5-8 minutes, tossing and turning constantly, until aromatic. Add the nutmeg. Remove from heat and allow to cool. Grind to a fine powder in a spice grinder. Store in an airtight jar. (Yields 1/4 cup spice mixture)

Orange Zest Granola


Whisk together:
1 cup water
1/2 cup melted coconut oil or grapeseed oil
3/4 cup maple syrup or honey
zest of 3 oranges
1/2 tsp salt

Mix together in a large bowl:

9 cups rolled oats
1/3 cup ground flaxseed
1 cup unsweetened, flaked or shredded coconut
1/2 cup sunflower seeds
1 1/2 cup walnuts, almonds or pecans

Bake at 225 degrees for 2 1/2 hours. Let cool. Store in air tight container.

(optional) After granola has cooled, Stir in:
1 cup craisins, raisins, other dried fruit or chocolate chips

Spicy Tilapia

Gluten Free, Soy Free, Dairy Free, Egg Free

ingredients:
2 Tilapia fillets
1 t. oilve oil
1 t.  paprika
1/4 - 1/2 t. Cayenne pepper
1/4 t. freshly ground black pepper
2-3 T lime juice

directions:
Preheat oven to 400 degrees. Mix together spices. Drizzle olive oil over fish, then coat with spice mixture. Lay fish in a glass baking dish. Pour lime juice over fish and spices. Bake for 10-15 minutes or till done.

Chorizo Salad

Maybe you can tell, I bought Choriza this week and we have been using it in a variety of delicious ways! I found a great Spanish imported Chorizo with no MSG, nitrates or artificial anything. And it tastes great, so a little bit can go a long way.

Serves 2
ingredients:
mixed greens
1 carrot, chopped
1/2 cup chopped broccoli
1/2 cup red cabbage, chopped
1/2 cup black beans, cooked
2 green onions, chopped
1 avocado, diced
1/4 pound of Chorizo, diced and cooked
1/4 to 1/2 cup salsa
tortilla chips - optional

directions:
Throw it all together for a delicious salad, top with salsa instead of dressing. Crumble some tortilla chips on top if you want a little more crunch!

Butternut, Black Bean, Chorizo Tacos



Gluten Free, Soy Free, Dairy Free, Egg Free


Serves 2-4
ingredients:
1 medium butternut squash, halved and seeded (or other winter squash)
1 red bell pepper, roasted
1 or 1 1/2 cups black beans, cooked (Tip: save money and avoid potential BPA in cans, use dried beans)
  - cooking dried beans -
1/4 pound Chorizo, cooked and diced or crumbled
1/4 cup fresh cilantro, chopped (Tip: use the stems of cilantro too, they also have great flavor!)
2 Tb lime juice (fresh or from concentrate)
1/4 tsp. crushed red pepper
salt and pepper to taste
corn tortillas
shredded cheese - optional
salsa

directions:
1. Cut squash in half lengthwise, seed and bake squash in a glass baking dish with 1 inch of water at 400 degrees for 40 minutes. Till very soft.
Let squash cool. Then scoop it out of the skin.
2.  In a large sauce pan, mash the squash, then add other ingredients up to tortillas and mix together. Warm ingredients together on the stove.
3.  Serve squash, bean, Chorizo mixture in warmed tortillas. Sprinkle with cheese (if desired) and salsa. Add more cilantro and another splash of lime if desired.
